Description

A refreshing summer salad made with watermelon and mozzarella that is perfect for warm days.


Ingredients

Scale
  • 6 pieces watermelon, cut into 4-inch squares
  • 6 slices fresh mozzarella
  • kosher salt and freshly ground black pepper
  • 3 tablespoons sliced fresh basil
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic glaze

Instructions

  1. On a serving platter, line up watermelon and mozzarella, alternating, in a single row. Sprinkle with salt and pepper.
  2. Sprinkle the watermelon and mozzarella with fresh basil, drizzle with olive oil and top with a drizzle of balsamic glaze.
  3. Serve two watermelon/mozzarella stacks per plate. Double the recipe for more servings!

Notes

  • For a more colorful presentation, you can add arugula or mint.
  • Make sure to use ripe, sweet watermelon for the best flavor.
