A nutritious and flavorful Wheat Berry Spinach Blueberry Salad that provides a healthy boost with a blend of grain, greens, and fruits.
Ingredients

- 2 cups cooked wheat berries
- 2 cups baby spinach leaves, loosely packed
- 1 cup fresh blueberries
- ¾ to 1 cup grated gouda (or aged white cheddar, crumbled feta, blue cheese, etc.)
- ½ cup dried cranberries
- ½ cup raisins (or dried cherries)
- ½ cup sliced almonds
- ¼ cup fresh basil, finely minced (or cilantro)
- ¼ cup olive oil (dressing)
- ¼ cup honey (or agave, dressing)
- ¼ cup apple cider vinegar (dressing)
- 2 teaspoons Dijon mustard (dressing)
- ¾ teaspoon salt (dressing)
- ¾ teaspoon black pepper (dressing)
Instructions
- To a large bowl, add all salad ingredients in the order listed; set aside.
- To a small glass jar or container with a lid, add all vinaigrette ingredients, put the lid on and shake vigorously until combined; taste and adjust seasoning if necessary.
- Drizzle about half the dressing over the salad, toss to combine, and add more if preferred moister. Serve salad immediately, or refrigerate in an airtight container and serve chilled.
Notes
- Storage: Extra vinaigrette will keep airtight in the fridge for up to 1 week.
- Leftover salad will last up to 3 days.
