Description

Irresistibly soft and sweet Biscoff cinnamon rolls topped with a delectable cream cheese frosting.


Ingredients

  • Dough
    • 1 cup dairy-free milk, 225g
    • ¼ cup light brown sugar, 50g (divided)
    • 2 ¼ tsp active dry yeast, 8g
    • 3 cups all-purpose flour, 365g
    • 1 tsp ground cinnamon, 4g
    • ½ tsp salt
    • 3 tbsp vegan butter, 45g (melted)
    • 1 tsp vanilla extract, 2g
  • Filling
    • ½ cup light brown sugar, 85g (loosely packed)
    • 1 tbsp ground cinnamon, 12g
    • 3 tbsp softened vegan butter, 45g
    • ¼ cup melted Biscoff Cookie Butter
    • 56 crushed Biscoff cookies
    • 1 tsp vanilla extract, 3g (optional)
  • Biscoff Cream Cheese Frosting
    • 2 tbsp vegan cream cheese, softened slightly
    • 1 cup powdered sugar, 130g
    • 2 tbsp melted Biscoff cookie butter
    • 12 tsp dairy-free milk (as needed)

Instructions

  1. Activate the Yeast: Mix the warm dairy-free milk and half of the brown sugar together. Sprinkle in the active dry yeast and let sit for 10 minutes until frothy.
  2. Make the Dough: In a large bowl, mix together the flour, remaining brown sugar, salt, and cinnamon. Make a well in the center and add the yeast mixture, vanilla, and melted vegan butter. Mix until a dough forms.
  3. Knead the Dough: Transfer to a lightly floured surface and knead for 8-10 minutes until soft and no longer sticky.
  4. Let Rise: Cover the dough and let it rise in a warm place for 1 ½ hours until doubled.
  5. Roll out Dough: Flatten the risen dough into a 6-inch disk, then roll it out into a 12” by 7” rectangle.
  6. Spread Filling: Combine the filling ingredients and spread over the dough, leaving a border. Sprinkle crushed Biscoff cookies on top.
  7. Cut Rolls & Rise Again: Roll the dough into a log, cut into 8 rolls, place in a baking dish, cover, and let rise for 20-30 minutes.
  8. Bake: Preheat oven to 375°F (190°C) and bake for 20-23 minutes until golden brown.
  9. Make the Icing: Combine the frosting ingredients and adjust consistency with dairy-free milk or powdered sugar.
  10. Cool and Frost: Let the rolls cool slightly before spreading the frosting and optionally drizzling with melted cookie butter and crushed cookies.

  • Ensure the dairy-free milk is warm, about 115°F, for yeast activation.
