Description
A quick and delicious Instant Pot recipe featuring chicken, broccoli, and pasta, all cooked to perfection in one pot.

- 2 tablespoons unsalted butter
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon mustard powder
- 1 teaspoon salt, or to taste
- 1 teaspoon ground pepper, or to taste
- 1 pound boneless skinless chicken breast, diced into bite-sized pieces
- 1 pound penne pasta, dry, uncooked
- 4 cups reduced sodium chicken broth
- 4 ounces full-fat cream cheese
- 4 cups fresh broccoli florets, diced into bite-sized pieces
- 1 cup heavy cream
- ½ cup Colby Jack cheese, shredded
- ¼ cup Parmesan cheese, plus more for garnishing if desired
- ½ teaspoon crushed red pepper flakes, optional for garnishing
- Fresh basil, optional for garnishing
Instructions
- To a 6-quart Instant Pot, turn it on to Saute mode, add the butter and allow it to melt.
- In a large ziptop bag, add the spices and seasonings, salt, pepper, add the chicken, seal the bag, and shake to coat the chicken evenly.
- Add the chicken to the melted butter in the Instant Pot and sauté uncovered for 2 minutes, stirring frequently.
- Add the uncooked penne pasta, pour the chicken broth over it, and stir to combine.
- Put the lid on the Instant Pot, ensuring the vent is sealed.
- Set the Instant Pot to High Pressure for 3 minutes.
- When the timer finishes, perform a quick release and carefully open the Instant Pot.
- Turn the Instant Pot back to Saute mode, add the cream cheese, pushing it down into the noodles to help it melt. Place the lid back on for 2 minutes.
- After 2 minutes, turn the Instant Pot off and open the lid.
- Add the broccoli, stir to combine, place the lid back on, and allow it to sit for 5 minutes to steam the broccoli.
- After 5 minutes, open the lid, add the heavy cream and both cheeses, stir to combine, and adjust seasoning as desired.
- Garnish optionally with additional Parmesan, red pepper flakes, and/or basil before serving.
Notes
- Refer to Stovetop Directions when using a stovetop pressure cooker.
- Ensure to reheat leftovers gently in the microwave.
