Ingredients

  • 8 chicken breasts (pounded to an even 1-inch thickness)
  • 1/2 teaspoon salt
  • 3/4 teaspoon freshly cracked black pepper
  • 1/2 cup extra virgin olive oil
  • 1/3 cup fresh-squeezed lemon juice
  • 1 1/2 teaspoons lemon zest
  • 1 1/2 teaspoons Greek seasoning
  • 1 teaspoon poultry seasoning
  • 2 teaspoons dried Greek oregano
  • 3 cloves garlic, minced

Instructions

  1. Trim any excess fat from the chicken breasts and pound them to an even 1-inch thickness. Cut 2-3 shallow slits into the thickest part of each breast.
  2. Prepare the marinade by whisking together olive oil, lemon juice, lemon zest, Greek seasoning, poultry seasoning, oregano, garlic, salt, and pepper in a bowl.
  3. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Ensure the chicken is well coated. Seal the bag or cover the dish and refrigerate for at least 6-8 hours (or overnight).
  4. Preheat the grill to medium-high heat for about 10 minutes. Remove the chicken from the refrigerator about 5 minutes before grilling.
  5. Drain the marinated chicken in a colander, then place the chicken breasts on the oiled grill grates.
  6. Cook for 4 minutes without moving the chicken, then flip and cook for another 4 minutes on the second side.
  7. Flip the chicken one final time and continue cooking for 4-8 minutes until the internal temperature reaches 165°F.
  8. Transfer the chicken to a clean plate and let it rest for 5 minutes before serving.
