Ingredients
Scale
- 1 ripe avocado
- 2 slices of bread (sourdough, whole grain, or your favorite toast base)
- ½ cup corn (fresh, canned, or frozen)
- 1 tablespoon butter (for charring corn)
- 2 tablespoons cotija cheese (or feta as a substitute)
- 1 tablespoon lime juice
- ½ teaspoon chili powder
- ¼ teaspoon smoked paprika
- Salt to taste
- 1 tablespoon chopped cilantro
- 1 tablespoon Mexican crema or mayo (optional for extra richness)
- Hot sauce (optional for spice lovers)
Instructions
- If using fresh corn, char it in a skillet with butter over medium heat until golden brown. If using canned or frozen corn, drain and sauté it in a pan with butter for 3-5 minutes until caramelized.
- Scoop the avocado into a bowl. Add lime juice, salt, and a pinch of chili powder for flavor. Mash to your desired consistency using a fork.
- Toast the bread until golden and crispy. Spread a generous layer of mashed avocado on each slice. Top with charred corn and crumbled cotija cheese.
- Garnish with fresh cilantro and an extra squeeze of lime. Drizzle with Mexican crema or hot sauce for an extra kick. Enjoy immediately!
Notes
- For a vegetarian version, use feta cheese as a substitute for cotija.
- Adjust the spices according to your heat preference.
- This recipe is best enjoyed fresh but can be prepared ahead of time by keeping ingredients separate until serving.
