Description

Mexican Street Corn Avocado Toast is a delicious and vibrant dish that combines the flavors of charred corn with creamy avocado on crispy toast, topped with cotija cheese and fresh herbs.

Ingredients

Scale
  • 1 ripe avocado
  • 2 slices of bread (sourdough, whole grain, or your favorite toast base)
  • ½ cup corn (fresh, canned, or frozen)
  • 1 tablespoon butter (for charring corn)
  • 2 tablespoons cotija cheese (or feta as a substitute)
  • 1 tablespoon lime juice
  • ½ teaspoon chili powder
  • ¼ teaspoon smoked paprika
  • Salt to taste
  • 1 tablespoon chopped cilantro
  • 1 tablespoon Mexican crema or mayo (optional for extra richness)
  • Hot sauce (optional for spice lovers)

Instructions

  1. If using fresh corn, char it in a skillet with butter over medium heat until golden brown. If using canned or frozen corn, drain and sauté it in a pan with butter for 3-5 minutes until caramelized.
  2. Scoop the avocado into a bowl. Add lime juice, salt, and a pinch of chili powder for flavor. Mash to your desired consistency using a fork.
  3. Toast the bread until golden and crispy. Spread a generous layer of mashed avocado on each slice. Top with charred corn and crumbled cotija cheese.
  4. Garnish with fresh cilantro and an extra squeeze of lime. Drizzle with Mexican crema or hot sauce for an extra kick. Enjoy immediately!

Notes

  • For a vegetarian version, use feta cheese as a substitute for cotija.
  • Adjust the spices according to your heat preference.
  • This recipe is best enjoyed fresh but can be prepared ahead of time by keeping ingredients separate until serving.
