Delicious Overnight Soft and Fluffy Cinnamon Rolls perfect for a sweet breakfast treat.

- up to 4 1/4 cups all-purpose flour, divided
- ⅓ cup granulated sugar
- 2 ¼ teaspoons instant dry yeast, one 1/4-ounce packet
- pinch salt, optional and to taste
- 6 tablespoons unsalted butter, melted
- 3 large eggs, lightly whisked
- ¾ cup buttermilk
- ½ cup unsalted butter, very soft (for filling)
- 1 to 1 ¼ cups light brown sugar, packed
- 3 to 4 teaspoons cinnamon, or to taste
- ½ cup unsalted butter, softened (for frosting)
- 6 ounces cream cheese, softened
- 1 tablespoon vanilla extract
- 1 pound confectioners’ sugar
- ½ teaspoon salt, optional and to taste
Instructions
- To the bowl of a stand mixer fitted with the paddle attachment, combine 4 cups flour, 1/3 cup sugar, yeast, and salt; set aside.
- Melt the butter in the microwave and set aside.
- Whisk the eggs in another bowl and set aside.
- Warm the buttermilk to temperature and add to the dry ingredients along with melted butter and eggs. Beat on medium-low speed until combined.
- Switch to a dough hook and knead for 10-12 minutes.
- If needed, add up to 1/4 cup additional flour, 1 tablespoon at a time.
- Place the dough in a greased bowl, cover, and let rise in a warm place for about 2 to 2 1/2 hours or until doubled in size.
- Prepare a baking pan by lining it with foil and spraying with cooking spray.
- Once the dough has risen, punch it down and turn it onto a floured surface. Knead lightly for 2 minutes.
- Roll the dough into a 16-by-12-inch rectangle and spread the soft butter over it, leaving a border.
- Sprinkle brown sugar and cinnamon over the buttered dough.
- Roll the dough tightly into a log and slice into 12 rolls.
- Place the rolls cut-side down in the prepared pan. Cover with plastic wrap.
- If making immediately, let rise until nearly doubled in size (1 to 1 1/2 hours). If making overnight, refrigerate instead.
- Bake at 350ºF for 22 to 25 minutes until golden on top and cooked through.
- For the frosting, beat butter and cream cheese until combined, then add vanilla and sugar, beating until smooth.
- Spread frosting over warm rolls and serve.
Notes
- For fluffier rolls, do not over-flour the dough.
- Warm buttermilk is critical for yeast activation.
- Store any extra frosting in the fridge or freezer.
